MEANING OF "WELL HUNG"

ORIGINAL MEANING WAS THAT OF A GAME BIRD, HUNG TO DRY FOR AN ACCEPTABLE PERIOD OF TIME BEFOR COOKING.

Just a clarification;
The game birds were hung up, not to dry, but to allow for cellular breakdown in the muscles and the gut, which would flavour and tenderize the meat. I think this was mostly done in Europe, before they discovered papaya.
