I have heard that the origin of this expression which is almost exclusively used in the bar/restaurant business comes from the time of prohibition and refers to how speakeasy owners would scramble to hide cases of liquor "out back" in the weeds when the police were raiding the place. If anyone can shed further light of this please let me know.
